Rocky Mountain Flatbread Co. on Urbanspoon




The Rocky Mountain Flatbread Company (RMFC) is a great place to stop by on the way back from a day of skiing.  Situated just off the main street in Canmore, this cozy spot offers up some great combinations of toppings on their artisanal pizza.  RMFC boasts organic and local ingredients, not to mention accommodating those who eat gluten-free (is it just me or has everyone jumped on the gluten-free bandwagon?  More on that in another post).  

On this particular day we chose to have their version of a meat lovers pizza, topped with ground beef, sausage, tomato, onion, green pepper and cheese (we can't pinpoint the specific types of cheese but definitely not your regular mozzarella- pecorino maybe?).  The toppings were very well balanced, not too much of any one ingredient.  The fresh tomatoes when roasted in the hot oven intensified the sweet flavour.  The dough was light and airy, but slightly chewy.  



We also had a pizza topped with spinach, onion, egg and cheese.  The tomato sauce was subtle enough to allow the flavours of the toppings to come through.  For example, even though the egg wasn't the most visible thing on the pizza, definitely contributed to the flavour profile.  On the menu, this particular flatbread was advertised as a "breakfast" pizza and it definitely tasted that way, almost like having your toast and omelet in the same bite.




We were seated near the wood-fired oven and it was impressive to watch the efficiency and skill of the team who assembled and cooked the pizzas.  The warmth and aromas coming from the oven were welcome on the cold day we visited.  In addition to the pizzas, they serve pasta, soups, salads and desserts.
