...Guacomole

This simple recipe is a great dip, using just a few ripe avocados, tomatoes and herbs and seasonings.  Served alongside tortilla chips, on fajitas, or tacos and a cold beer, you can't go wrong.


The ingredients and their amounts are just guidelines.  I usually end up dividing the mashed avocados into two bowls and mixing in more or less onion or cumin depending on who I am making it for.  Also, raw onion tends to be a bit spicy, so I rinse the diced onion under some warm water for a few minutes.  However, some people enjoy the spiciness of raw onion, so feel free to modify the ingredients to your own tastes.


Ingredients: (Yields approximately 2-3 cups of dip)


-4 ripe avocados

-Half an onion, diced
-1 garlic clove, minced
-1 tomato, diced (if you want it less watery, scoop out the seeds first)
-2 tbsp cilantro, finely chopped
-Juice of 1 lime
-1/4 tsp cumin
-Salt and pepper to taste

Method


1. Mash up avocados with a fork in a large bowl until you get a creamy consistency.  I like mine a little chunkier.


2.  Mix in onions, garlic, tomato, cilantro, lime juice, and cumin.  


3.  Sprinkle in salt and pepper to taste.


If you plan on storing this in the fridge, put a layer of plastic wrap directly on the surface to limit the oxidization which causes the guacamole to turn brown.
