...Eggnog French Toast

Don't feel like another glass of that eggnog but don't want to throw it away either?  Here is a great recipe that will use up that leftover eggnog, that's not in your face EGGNOG!- but much more subtle, bringing back hopefully, good memories of that holiday meal.  The sweetness of the eggnog french toast paired with the saltiness of bacon makes the perfect post-Christmas brunch.

Ingredients: (Serves 4)
- 8 slices of day old sourdough bread
- 1 cup of eggnog
- 1 cup of 2% milk
- 2 eggs
- 1 tsp cinnamon
- 1 pinch of salt
- 8 slices of dry cured bacon
- Maple syrup

Method:
1. Lay the bacon in a single layer on a baking sheet and bake in a 325 degree oven until golden brown

2. Remove the bacon and reserve the bacon fat

3. Combine the eggnog, milk, cinnamon, eggs and salt

4. Dip each slice of bread into the eggnog mixture and let it sit for 5-10 seconds before removing and soaking the next piece of bread

5. Once all the slices have been soaked, pour over any extra eggnog mixture and let sit for another 10-20 minutes

6. In a nonstick pan, heat up 2 tbsp of the reserved bacon fat and fry the french toast until golden brown

7. Serve the french toast with the bacon and a generous drizzle of maple syrup

Enjoy!
