...Roasted Chicken (Yatu Spice Paste)

If you've been following our blog recently, you'll know that our favourite farmer's market in Calgary is hands down the Kingsland Market. Not only does it have the best food options, but also a great community feel and unique vendors. One of those vendors that we had the pleasure of meeting was the maker of Yatu Gourmet Magic, an Ethiopian spice paste perfect for meats and veggies of all kinds. It's predominately a tomato based sauce but kicked up with a number of different spices including what we think is cinnamon and cardamom. Here is a roasted chicken recipe that really highlights the deliciousness of this spice blend.




Ingredients:
- one whole organic free range chicken (broken down into 10 pieces)
- 3 large carrots (Roughly chopped)
- 2 large onions (Roughly chopped)
- 1 green onion (Thinly sliced)
- 3-4 tbsp Yatu Gourmet Magic
- Salt and pepper to taste




1) Scatter the chopped onions and carrots in the bottom of an oven proof baking dish

2) Place the chicken over the vegetables, spoon over the Yatu Gourmet Magic and massage the sauce into each piece of chicken. Marinate for at least one day.

3) Preheat your oven to 400 degrees and season the chicken pieces lightly with salt and pepper.

4) Bake the chicken and vegetables for approximately one hour and 15 minutes or until the chicken reaches an internal temperature of 165 degrees 

5) Serve the chicken over the roasted vegetables and garnish with sliced green onion.
