...Steak Florentine

This is my take on the classic steak florentine; in addition to the traditional flavours of lemon and olive oil, shaved parmesan cheese adds just the right amount of richness to this steak recipe. If you choose, aging your beef in the refrigerator for 1-2 days prior to grilling both tenderizes the meat and intensifies the flavours.

Ingredients:
- 3 - 4 New York strip steaks
- 2/3 cup grated parmesan cheese
- 4-5 tbsp extra virgin olive oil
- 1 tbsp lemon zest
- Juice of half a lemon
- Sea salt
- Freshly cracked black pepper
- 1 tbsp chopped fresh rosemary

Method:

1. Rinse steaks well under cold water and dry thoroughly with paper towel. 

2. Place the steaks in a dish over metal cooling racks to elevate them off the bottom of the dish. Cover with paper towel and allow to dry age in the fridge for 1-2 days.

3. 2 hours before grilling, take the steaks out of the fridge and allow to come to room temperature. 

4. Season generously with sea salt, cracked pepper, chopped rosemary and allow to sit for another 30 minutes. Grill over medium high heat until your desired doneness (4-5 minutes per side for medium rare)

5. Let the meat rest in a warm spot for at least 15-20 minutes and slice into 1 cm thick pieces.



6. Arrange on a large serving platter and sprinkle over lemon juice, zest and parmesan cheese. Drizzle over extra virgin olive oil at the table or just before serving.
