...Rib eye with Blue Cheese Butter

Living in cattle country we are blessed with high quality meat at super reasonable prices. Of all the cuts of meat available, our favorite hands down would have to be rib eye. No other cut is able to balance tenderness with big beefy flavor. A delicious and easy way to complement this big flavor is with a blue cheese compound butter.


Ingredients

- 2 rib eye steaks
- 2 green onions minced
- 3 tbsp unsalted butter
- 3 tbsp Gorgonzola blue cheese
- 1/2 tsp honey
- Salt and pepper to taste

Method

1. Combine the butter, blue cheese, minced green onions and honey in a bowl. place the mixture onto a sheet of plastic wrap, roll into a log and allow to chill in the freezer.


2. Season the steaks on both sides generously with salt and pepper. Once the meat is at room temperature place in a preheated heavy bottomed skillet. Cook the steak 3-4 minutes on each side for medium rare to medium doneness turning the steak only once in order to ensure a nice brown crust on both sides.


3. Rest the steaks on a warm place for at least 10 minutes.


4. While the steaks are resting place a pat of the blue cheese butter on each and allow to melt during the resting process


5. Enjoy with a nice bottle of red!
