...Cheddar and Spinach Green Onion Crepes

Here is a savoury crepe recipe that can be served pretty much any time of day from brunch to dinner. The crepes are made with green onion and filled with sharp cheddar cheese and sautéed spinach.

- 10 cherry tomatoes, halved
- 2 cups of grated cheddar cheese
- 4 cups washed spinach
- 2 cloves of garlic, chopped
- 1 bunch of green onions, finely chopped
- 1 cup all purpose flour
- 1 cup milk
- 2 large eggs
- 2 tbsp melted butter
- Salt and pepper

1. Combine the flour, eggs, milk, butter and 1 tbsp of salt and let sit for at least an hour

2. Sauté the garlic and spinach until soft. Once cool, squeeze out as much liquid as possible and chop finely

3. In a non stick pan, fry 1 tbsp of green onions until soft, add 5 tbsp of crepe batter and fry till golden brown, flip then set aside to cool

4. Roll each crepe with 1 tbsp each of cheddar and spinach

5. Place the stuffed crepes in an oven proof dish and scatter over the remainder of the cheese, green onions and cherry tomatoes

6. Bake the crepes in a preheated 350 degree oven for 30 minutes
