...Banana Pancakes

Banana pancakes.  What more can I say?  Simple, easy, scrumptious and the perfect way to start your Saturday morning.





Ingredients (Makes 12 pancakes)
-1 cup flour
-1 tbsp sugar
-2 tsp baking powder
-1/4 tsp salt
-2 mashed ripe bananas
-1 beaten egg
-1 cup milk
-2 tbsp vegetable oil


Method


1.  In a bowl, combine dry ingredients: flour, sugar, baking powder and salt.


2.  In a separate bowl, mash the bananas and add the egg, milk and vegetable oil.


3.  Add one third of the flour mixture into the wet ingredients and mix in.  Gradually add in the remaining flour while mixing the batter.  Batter will be slightly lumpy because of the bananas.




4.  Oil a pan or griddle on medium heat.  Pour 1/4 cup of batter onto the griddle.  I like to spread the batter out a little in a circular shape if it does not immediately spread on its own.


5.  Use a spatula to flip the pancake.   Make sure both sides are golden brown (approximately 1.5 minutes on each side).  


6.  Serve on a warm plate with sliced bananas and syrup.

  1. Yummy! These banana pancakes look so delicious. The last picture with the piles of bananas and syrup makes it look so good. It would all taste so nice with a glass of milk on the side. I love easy pancakes recipes. I'm so happy i found this one. Thanks for sharing :)

  3. how do these freeze? i live alone so thought i'd make them, freeze the ones i don't eat within a couple days and pop them in the toaster when i want one.

  4. We have not tried freezing pancakes. However upon some research it seems others have done it successfully. The recommendation seems to be let them cool completely and freeze them in a single layer on wax paper/plastic wrap. Then, stack them with wax paper/plastic wrap in between each. The bananas in this recipe does make it more difficult since they will release water when you reheat them in the microwave or toaster. Give it a try and let us know how it works out!
