Spring has sprung and I've been inspired by the beautiful asparagus that is currently in season.  Used in this rotini dish with creamy ricotta and flavourful bacon, it is not only gorgeous to look at but delicious to eat.  On this occasion, I've used Catelli's Healthy Harvest Ancient Grains rotini and the slightly firmer texture compliments the asparagus perfectly.

I'll admit that I quite enjoy my pasta loaded up with sauce. However every so  often I do like my pasta simple. In this recipe, the spaghetti is simply coated in the delicious oils rendered from the chorizo sausage and freshly grated parmesan cheese. The secret ingredient is a splash of good balsamic vinegar to cut through the richness of the sausage while adding a hint of sweetness.

You might have seen Darrin's mozzarella meatballs recipe.  I would like to think this one is better - moist, garlicy, tender meatballs in a beautiful creamy rosé sauce.  The panko gives the meatballs a lighter, almost 'fluffier' texture compared to regular bread crumbs.  Add rosemary, basil and garlic into the mix and you have a meatball sauce that is definitely a winner.



If you are a fan of 'Pizza Pockets' then you will be familiar with the concept of the calzone. Essentially it is pizza dough stuffed with cheese, meats and tomato sauce, folded into a half moon shape and baked till golden brown. Surprisingly they're really easy and quick to make and can be personalized to include your favourite flavours. Ours was filled with sausage, bacon, caramelized onion, mushrooms and mozzarella cheese is a great hand held meal for watching the game!
Next day cold calzone- even better!

Meatballs are one of life's great comfort foods. Not only are they easy to whip up when you've had a busy day but they're also sure to please those you're cooking for too. Our recipe uses a combination of beef and pork and is spiked with grated mozzarella cheese. The addition of pork and mozzarella keeps the meatballs really moist and tender. 


Many of us know a good quality olive oil can make a world of difference in a dish.  Not only can olive oil be used in the cooking process, but as a beautiful garnish.  The numerous occasions which I've seen professional chefs drizzle olive oil over a dish as a finishing touch, says a lot about the way it can round out a dish, both in presentation and flavour.  Luckily for us, we didn't have to go far to obtain some of the best quality olive oil out there...



This is my take on the classic steak florentine; in addition to the traditional flavours of lemon and olive oil, shaved parmesan cheese adds just the right amount of richness to this steak recipe. If you choose, aging your beef in the refrigerator for 1-2 days prior to grilling both tenderizes the meat and intensifies the flavours.
Over the weekend we made some thin crust pizza and realized we had not shared our favourite topping recipe which includes anchovy, mushroom and garlic.  Here are the toppings we made this weekend and the deliciousness that ensued as illustrated in the following pictures.

As we still had a lot of heirloom tomatoes left from our harvest we were looking for a dish that really showcases their sweet and intense tomato flavour. This pasta salad fits the bill and is an easy take on the traditional Puttanesca pasta that includes the briny flavours of capers, olives and anchovy. If you're an anchovy hater, this recipe might be the perfect recipe to change your mind as the fillets are blended into a paste and when combined with the sweet and sour balsamic vinegar and fruity olive oil really leaves a gentle hum of delicious anchovy flavour that permeates the dish.
