...Turkey Apple Meatballs

Our girl turned one last week and we are coming to terms with the fact that she is no longer a baby but a toddler.  Where did the time go?  I'm sure all parents wonder the same thing.  The thing about a toddler, especially ours, is they keep you very busy.  For this reason, the blog has been somewhat neglected.  We are however, giving little updates on our food adventures on Twitter and Instagram @dcfortheloveof- so check us out there if you aren't already.  In the meantime, here is a quick turkey apple meatball recipe we have been utilizing that our little one loves but also is delicious for the adults.

Ingredients (approx. 2 dozen medium sized meatballs)
-1 lb package of ground turkey
-1 apple, minced
-1 onion, minced
-3 cloves garlic, minced
-2/3 cup panko crumbs (this makes them super soft, if you want firmer meatballs, add less panko)
-1/3 cup milk
-1 egg
-3 tbsp basil, finely chopped
-Grated parmesan for garnish (optional)

Method 

1. Preheat oven to 350 F.  Sauté the onions and apple until soft.  Add the garlic near the end and cook for another minute or two.  Cool the mixture in a large bowl.
2. Add to the mixture, the panko, milk, egg and basil.  Using a large spoon, combine the mixture until combined.

3.  Make medium sized meatballs by rolling the mixture between your hands or using two spoons as I like to do, since the turkey mixture can be very sticky.  Place them on a baking sheet lined with foil and greased with oil.
4.  Give the meatballs a light drizzle of oil and place them in the oven for 20-30 minutes until cooked and golden on the outside. 

5.  Serve the meatballs in pasta sauce or if you baby prefers, as is.
