...Herb Roasted Chicken

On a Friday night, after a long work week nothing is easier to make or more satisfying to eat than a herb roasted chicken dinner.
Ingredients:
- 1 whole chicken, 3lbs
- 1 onion chopped
- 3 carrots chopped
- 3 stalks of celery chopped
- 2 tbsp rosemary chopped
- 2 tbsp sage chopped
- 2 tbsp thyme chopped

Method:

1. Preheat your oven to 450 degrees Celsius

2. Place the chicken on top of the bed of onion, carrot and celery. Rub the chicken with olive oil and sprinkle over the chopped herbs, salt and pepper

3. Place the chicken in the preheated oven and drop the heat to 375 degrees and bake for 90 minutes or until the internal temperature of the breast and leg reaches 165 degrees

4. Remove the chicken from the roasting pan and let rest for 15 minutes before carving

  2. It's not that he doesn't allow it - it's just not his favorite! When I mentioned we hadn't cooked chicken in almost 6 months he decided to treat me lol.
